Baked Cauliflower “Mac” and Cheese
Ingredients
- 6-8 cups cauliflower chopped into 1 inch pieces
- 2 Tbsp butter
- 3 Tbsp flour
- 2 cups whole milk
- 1 ½ tsp salt
- ¼ tsp black pepper
- ½ tsp garlic powder
- 2 cups shredded cheese
Directions
- Preheat oven to 375°F
- Fill a microwave-safe bowl with 1 inch of water and add the cauliflower. Microwave for 8 minutes. Drain when done.
- In a sauce pan, melt butter over medium heat.
- Stir in flour for about 3 minutes.
- Slowly whisk in milk allowing the mixture to thicken.
- Remove from heat and add the seasonings and shredded cheese. Melt completely, then add the cauliflower.
- Transfer to a baking dish and bake for 25 minutes.
- Optional: put under the broiler for 2-4 minutes for a golden top.
