Baked Cauliflower “Mac” and Cheese

Ingredients

  • 6-8 cups cauliflower chopped into 1 inch pieces
  • 2 Tbsp butter
  • 3 Tbsp flour
  • 2 cups whole milk
  • 1 ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • 2 cups shredded cheese

Directions

  1. Preheat oven to 375°F
  2. Fill a microwave-safe bowl with 1 inch of water and add the cauliflower. Microwave for 8 minutes. Drain when done.
  3. In a sauce pan, melt butter over medium heat.
  4. Stir in flour for about 3 minutes.
  5. Slowly whisk in milk allowing the mixture to thicken.
  6. Remove from heat and add the seasonings and shredded cheese. Melt completely, then add the cauliflower.
  7. Transfer to a baking dish and bake for 25 minutes.
  8. Optional: put under the broiler for 2-4 minutes for a golden top.
