As we settle into fall, there’s nothing better than a warm meal with nutritious and fresh ingredients! At South Michigan Food Bank, we love recipes that bring people together and make the most out of affordable ingredients. Here are a few of our favorite fall-inspired recipes to keep you cozy and nourished all season long!
Fall Taco Soup

Ingredients:
1 lb ground turkey or beef
1 medium onion, chopped
2 cloves garlic, minced (or ½ tsp garlic powder)
1 packet taco seasoning
1 can black beans, drained and rinsed
1 can kidney beans, drained and rinsed
1 can corn, drained
1 can diced tomatoes (fire-roasted if available)
1 (4oz) can diced green chilies (optional, for spice)
3 cups low-sodium chicken or vegetable broth
Toppings of your choice (try shredded cheese, tortilla chips, diced avocado, cilantro, etc.)
Directions:
- In a large pot, brown the turkey/beef with the onion over medium heat. Drain the excess fat if needed.
- Stir in the garlic and taco seasoning.
- Add the beans, corn, tomatoes, chilies, and broth, and stir well.
- Bring to a boil then reduce heat and simmer uncovered for 20-25 minutes, stirring occasionally.
- Taste and adjust seasoning with salt, pepper, or extra chili powder.
- Serve with your preferred toppings.
Ingredients:
1 cup rolled oats
2 cups milk or non-dairy alternative
1 medium apple, peeled and diced
1 tbsp dried raisins or cranberries
1-2 tsp cinnamon
1-2 tsp maple syrup or honey
1 tsp vanilla extract
Toppings of your choice (try Greek yogurt, chopped nuts, extra apples, etc.)
Directions:
- In a medium saucepan, bring the milk to a gentle boil.
- Stir in the oats, diced apples, raisins/cranberries, cinnamon, vanilla, and a pinch of salt.
- Reduce heat to low and simmer, stirring occasionally, until oats are creamy and apples are tender (about 8-10 minutes).
- Taste and sweeten with maple syrup or honey, if desired.
- Serve warm, topped with fruit or extra nuts.
